Crude oil obtained from pressing or solvent extraction contains impurities including phospholipids, free fatty acids, pigments, and odorous substances that make it unsuitable for direct consumption . The Four-Stage Refining Process
1. Degumming – Removes phospholipids and gums by adding phosphoric acid or hot water, followed by centrifugal separation . This prevents cloudiness and improves oil stability.
2. Deacidification – Eliminates free fatty acids (FFA) that cause sour taste and rancidity. Two methods are available: chemical refining (alkali neutralization) for most vegetable oils, and physical refining (steam distillation) for high-acid oils like palm and coconut .
3. Decolorization – Bleaches oil with activated clay under vacuum to adsorb pigments (chlorophyll, carotenoids). This produces crystal-clear oil .
4. Deodorization – High-temperature (230-260°C), high-vacuum steam stripping removes volatile compounds that cause unpleasant odors and flavors .
For oils with high wax content (sunflower, rice bran, corn), an additional dewaxing/winterization step is integrated to prevent cloudiness at low temperatures .
